Citrus Avocado Salad Dressing Recipe

Summer in here in Wisconsin and we are whipping up some delicious spinach salads to celebrate!  This avocado salad dressing is the perfect addition.

My salad intake goes up dramatically when summer is in the air and I whipped up this delicious loaded spinach salad the other day with this AH-MAZING avocado citrus dressing.

I have been on a little “detox” lately, not to lose weight or anything but actually to detox my SKIN.

Troublesome skin has always been a part of my life but lately it has been getting worse and I can’t put my finger on it.

I have been sorting through balancing my hormones naturally (check out THIS post on that) and it has seemed to help, but there is still room for improvement.

So, after diving deep into Google Search land I have decide to do a little skin detox.

This has involved stripping my meals and go back to the basics.  Lots and lots of water, fresh fruit and raw veggies.  I am completely cutting out sugar, wheat, and anything processed to see if it helps.

I don’t eat much of that to begin with, but have a feeling the little bit I do eat is causing some flare ups.

Any way, more on that later!  I will do a full report once I try this out for a month and am hoping to make a little “Skin Detox” eBook with recipes and such!

But back to the reason you are here, this delicious looking salad!

This salad recipe all started with this detox.  Lately I have been LOVING a homemade dressing of ACV, olive oil and nutritional yeast.  BUT, have read that sometimes olive oil can cause skin irritation so wanted to eliminate it to be safe.

This recipe is SO easy I almost felt silly writing a whole blog post about it, but it’s so yummy I wanted to share it with anyone who stumbles on this site.

Here we have it.

For the salad:
Spinach
Strawberries
Quinoa
Red Onion
Walnuts

Dressing: (this makes a batch for a week worth of salads)
3 avocados
2 cup fresh pressed orange juice
1-2 teaspoons himalayan sea salt

That’s it.  Told you it was easy!

This creamy dressing is perfect on just about ANY salad and will definitely become a go-to recipe in our house!

I’ve been sharing a little more on our Instagram Stories about what I all eat in a day, so be sure to follow us THERE! I’ll be doing some more posts on that too, as I get a lot of questions about what to eat on a plant based diet.

Can’t wait to share with you all.  Thanks, as always, for reading.

with love,
Jackie
